Tropi-Carrot Smoothie

I was in the mood for a smoothie (as is often the case lately), and this one was super refreshing on this beautiful summer day! I love experimenting with making smoothies, tossing into the blender whatever sounds good at the moment. And this one turned out to have just the right amount of sweetness, with a pleasant, subtle tang on the finish.











Tropi-Carrot Smoothie
Serves approx. 1 and a half pints

Ingredients:

- 1 handful frozen mango chunks
- 1 handful sliced strawberries
- 1 carrot (chopped)
- 1 cup orange juice
- 1 6oz. container Yoplait Light apricot mango sorbet yogurt
- 1/2 cup plain Quaker Oats
- 2 ice cubes (optional)

Directions:

1. Toss all ingredients in a blender and puree to desired consistency.

Notes:
- I don't mind a little texture in my smoothies, which is exactly what the oats lend to the consistency of this one. So if you would like a smoother mouthfeel, I would recommend passing on the oats, and substituting a different source high in fiber.
- I also opted to add a couple ice cubes to the mix to make it colder.
